Grinder and sausage stuffer purchase.

Well guys.

I have been quiet for a few days, but I have been busy sorting out my Sausage making needs.
I have a Santos Number 12/8 mincer that I purchased 4 years ago, new for £200 from Ebay, at the time of buying this grinder was selling for over £800 new.

It was my first purchase when I joined Ebay. It is a good little grinder, it has one problem though, the mouth of the feed tube is very narrow, It can be a push when I have not cut a bit of meat small enough. They also do a 12/12 model which has a 4mm wider tube, does not sound a lot but I can assure you it is to me. The other bonus is that my one the grinding head is made of Aluminium, the number 12 is all stainless steel. The one I have is a number 8 mincer head this one is a number 12 head.

I am normally a sniper on Ebay, I confirm my bid with 10 seconds to go. I had a dental appointment that collided with the end time, I thought I would enter a price of £329.99. I got back from the dentist after having 3 jags. feeling like my cheek was twice the size. I headed for the puter to see if I had won the grinder, to my dismay I was outbid.
I was gutted, I really wanted this mincer. I decided to check the bidding history, only to find that the person that outbid me had zero feedback. Cogs started turning in my head and I got to thinking could the seller have set up an account just to bid his item up.
I sent the seller an email saying that just on the off chance that it was him that was bidding his grinder up and he is now landed with it, give me a call and we can discuss me buying it.
Low and behold 3 days later the guy calls me and says that the buyer was no longer a member and the grinder was still for sale, would I like to buy it. Of course I said yes, to which the seller said, since I was the second bidder we would just knock off the top bidders last bid that meant I was paying £329.99 for the mincer.
Well being a tight Scotsman, I said to the seller, it does not work that way, all the bids that the zero feedback guy left are all taken away. This left me with the grinder that was used once before the guys shop went belly up, buying the grinder for £200.
By this time I am doing a lap of honour around the living room jumping anything that is in my way. Before we ended the conversation, it turned out that he also has a Tre Spade Number 5 deluxe horizontal sausage stuffer which he would sell as well if I was interested. Used once as well (like they all say). Retails at about £400 here. I said I would make him one offer which was the only offer I was going to make, take it or leave it. I said I would pay him £400 for them both on the condition that he was responsible for the postage of the two items getting to me . He went for it.

Things are coming together. Will soon be making my first post of sausages being made.

Hi Ian,
That's great news and we're happy for you. Sounds like you will be making lots of sausage. You'll never regret getting good quality tools that don't break down and you don't have to fight all the time. Lots of folks quit making sausage because of shabby equipment and the bad experiences they have with it. :cry: If folks would realize just how much money they saved by making their own meat products, I believe they would purchase proper equipment to begin with - not to mention the "quality" flavors to be had. It's a shame more people don't stay with it because they will never experience the quality of "real" sausage... especially the fermented dry-cured types that really tickle the taste buds.
My neighbor just tried some of my dry-cured salami. His eyes lit up and suddenly looked like pie plates. He danced around and kept remarking that it was the best meat product he had ever tasted. The next day, he told the entire office where he works. Now, I'm telling you... THAT makes it all worth it! That reaction is the kicker. He wanted to buy some more and I told him I no longer make it for sale to the public, but instruct small groups in how to make their own sausages. He has five or six people lined up already! :shock:
Good luck in you endeavors Ian. I hope you make sausage often, along with your own hams, bacon, smoked birds and fish etc. When you taste your own homemade meats, just smile inside and be proud that NOW you recognize the taste of something that grocery stores will never be able to supply. There are several of us "ol' coots" around this site who are willing to help you anytime you rattle our chains. :wink:

You are a man after my own heart. My father emmigtrated from Scotland and I have the same genetic requirement to get the 'best bang out of my buck, or pound in your case.'
Congratulations on a very shrewd purchase. We hope to hear progress reports soon.

I appreciate your encouragement. They were shipped yesterday should have them by Monday or Tuesday.
I would be real happy if any members would like to share a good Pork and also a Venison sausage recipe with me. I could search the web for recipes, I have an idea that the members here will have good recipes.
My next priority is a smoker. I am coming around to thinking that the polish style smoker is simplicity in its self. I have been perusing the Polish site and saw the new type of smoker that is similar to a Bradley but it does not use pucks it has an auger type feed system that feeds saw dust or fine wood chips to the heating element then it drops burnt out into a pan of water. It is a great idea. 10 hours of smoke on one hopper fill. I did a money conversion to the £ it is as cheap as can be, shipping may be the costly part. I will get the name of it and post it.I am sure you already know what I am talking about.
I am keen to hear more about venison products that can be smoked, like Venison snack sticks and Venison fermented sausages. The wish list is endless.
I go to bed at night having spent hours looking at making and smoking sausages, that I cant sleep for seeing sausages and smoke.
Exciting times ahead
