Hello from PA

Post by cryan1980 » Sat Dec 15, 2012 12:48

I have added a few post recently after lurking a bit and realize I have not added a greeting.

I am not sure how I found the english forum but I am glad I did. I used to browse the polish side through google translate when I had moments to kill.

I have hot smoked food since about'99 or 2000, (Brethren as nbbd) Steadily increasing projects to try along the way. I hunt and fish and we butcher the deer ourselves so making fresh sausages and jerky making was also learned along the way.

About 2 years ago started reading about curing meat. 1 year ago started making our own bacon, hot dogs, corned beef, ring bologna pastrami...

Just this week finally took the plunge for dry curing. Pancetta and bresaola in the cure.

I work in Education a part of me dreams of just walking out learning the meat cutting trade :???:

Thank you very much for posting these files. Very interesting from what I have looked at so far.

Baconologist, What program did you use to watch the video portions? ( I watched a few minutes, great vid quality, now I wonder if there is a way to know what everyone is saying)

Totally frustrated. Spent an inordinate amount of time trying everything, including VLC and two different extractor programs. Was able to open only one 30 sec. clip and the text files. The rest of the video files won't work.

Max, sorry, I'm computer illiterate . Any help would be welcome in reading these files. Maybe I'm to old or my computer is too slow. Thanks in advance.

For anyone Struggling with VLC Play back.

1. Start the VLC program
2. In upper left hand corner select media
3. Select Open Folder.
4. Navigate to where you have the Video_TS folder is located
5. Highlight Video_TS and click select folder.
6. Wait 3-5 Seconds and you should see the DVD menu
7. Select Czesc I or II from the screen.

(If you are having trouble getting the files to begin with)
Download all of the files to the same location on your computer and then use an extraction program capable of RAR files. Open the first file and the rest will open as needed. I used WinRAR which has a 40day trial licence)
