MELBOURNE SALAMI FESTIVAL

TO ALL AUSTRALIAN Members.
As it says in the subject, Melbourne will be holding a Salami festival later this month.
Great if you live in Melbourne or easy driving distance.
The Best part is that the organisers are planning to open a shop/website where everything will be available for salami making.
Leave tem your email address and you will be notified about classes, ingredients and specials.

Hi Jan L,
I won't be going, I live 2000 km away for starters and it's recuperation time for me then.
As far as I know, no members are attending at the moment, no doubt some Victorian members will go.

Hi Phil,
My knee replacement was a total success, the Physio work outs are tough but I've been through worse.
I am starting to cure a batch of belly bacon next week just to keep my hand in and brain occupied.

Good to hear Jan. Tell us more about the streaky bacon. I've ben using back bacon successfully but bought my first side of pork so have a belly with skin on to get to.

Phil,
To cure belly bacon I like to use BigGuy's cure and smoke it with Australian Hardwoods.
This combination suits ME!!

Thanks for the invitation but my legs, ankle's and knees have been punished enough for the last 50 years. Eventually cross country and long distance running catch up with everybody.
