I haven't worked out the picture posting thing yet, as my technical skills are at the same level as my sausage-making skills.

This is the smokehouse I built around 2 years ago, it is made from Cypress Pine. My intention was to have it wood fired, hence the small brick fireplace on the bottom right, the problem I had was their was no control over the internal temperature of the smokehouse. Once it was fired up the temp. would soar to very hot in a matter of minutes, no good for slow hot smoking. I then bought a dual LPG S/Steel Wok burner, now I can control the temperature to within a few degrees and hold it. The capacity is around 50 Ibs, I also installed a cold smoking unit from SmokeDaddy.com, it is brilliant.
I use an upright freezer that is dedicated to only Sausages, it has a hot plate with a Johnson controller on it, It keeps perfect temps at all times, I dry at 100 degrees for an hour,mthen bump it 10 dgrees every hour, at 140 i put a packet of foil wrapped around a handful of wood pellets directly on one of the burners, the freezer is sealed and the little wood produces smoke and keeps it there for 3 hours
I also have a dedicated cure cabinet for long term curing, this picture shows the Batch of Salami Alassandre and the pepperoni that is on day 16 today

All those smokehouses look great, especially the smoked goodies. I like to post some pictures of my endeavours and smoker set up.
I have installed Photobucket, up loaded some pictures and came to a screaming halt, no info on how to post photos on the forum.
Remember, I am only an old computer nerd so some help is greatly appreciated.
The last time I posted some pictures, I emailed them to Bubba, who posted them for me.
Bubba has disappeared at the moment, I imagine too much work. Poor devil.

Jan, when you view the picture on Photobucket off to the right hand side of the screen will be four choices Ina box called image links The bottom one is : IMG code. copy that one. It will flash yellow and state "copied" Go to you sausage message and paste it into your text. Before you post the message you can click preview and see your message as it will display on the forum. If you copy the "direct link" you will get this: http://i1112.photobucket.com/albums/k48 ... /001-1.jpg But copying the IMG code gets you this:
