Taste is better. Texture is better. I don't appreciate eating it alone like I can with coppa or prosciutto. Not as tasty as a coppa, but I will make more
Don't be afraid the vary the spice mix and adjust for more flavor! As long as you keep the salt and cure amounts at the recommended safe amounts, it's great to try different flavor profiles.
