hi again i read that it is not good to use fresh herbs in dry and ferm i have some california reapers that i want to use is there any way to do this safely

I personally think this is one of those things where people split hairs. Sure, it would be possible to introduce some pathogen into your sausage but the odds of that is very minute.

However, from a health standpoint when you are selling stuff to the public then you are required to have a paper trail of all your ingredients and the ingredients are supposed to be inspected along the way. Does this make it any safer or does this just pinpoint where the problem originated?

Personally, I grow and use my own ingredients and have never had a problem with using them but I cannot sell stuff used without the paper trail however I wouldn't lose any sleep over it if I did because I don't fertilize with raw manure or sewage sludge and I'd like to think I have better hygiene than many of the field workers picking produce.

Just my opinion.
