An update on this thread:- this past weekend I took some of this frozen sausage through to my daughter and her husband.
My daughter does not eat spinach, tonight she sent me a text massage "please make more sausage just like this, best way to eat spinach, and sooooo yummm!"
So there you go, this one is definitely a keeper!

Bubba, I am going to use this recipe in a roulade made with a 1/2 inch slab of pork wrapped around a core of this sausage.
I tried a small similar version tonight with a chicken curry sausage. That was very pleasing.

That sounds like a very interesting and tasty way to make roulade, Ross. Did you use fresh pork or smoked pork?

I have two fresh pork butts and just filleted a slice off the broad side of the butt. Wrapped it around the lump of sausage meat and salted and pepper. Roast at 325 until 155 inside.

Man it works better than a lot of what is put out there. I even have Nancy convinced that this is the approach we want to take for the holiday company dinners. We just have to experiment with the many combinations and select the one we like best. This makes a roast turkey seem fundamental.
