I shudder at the thought! She's actually an angel well above what I deserve but her choice of foods does have me scratching my head sometimes.

Kielbasa Wojskowa /Army Kielbasa. In 1970's made for army soldiers, beef and pork. Tasty, a little less lean than previous kielbasa but very good. I Have used again Paweljack version.

Hello all, I have been lurking here for a couple of years, I still consider myself a newbie to this art. As Butterbean said, I have learned not to view this site on an empty stomach. So far I have eaten everything I have made.... And survived  This sure looks somthing I would love to look into and try. Would someone with more experience than me please post a link to the recipe on the polish site, I believe I can use a translation app to convert to English.

Thank you, Alan

Well it appears I have a bit to learn on quoting a post with a pic in it. To ease confusion it the to pic in stefan's post, the sandwich loaf. Thanks again, Alan

Hello Everybody.
Because EASTER is coming, so in my polish tradition is time to prepare some special food for Holyday. Food basket for Blessing is tradition but also a table full of treats like cakes, salads, meats and of course sausage. So my friends and myself - we prepared some kielbasas and wedzonkis then I've smoked them in my Cadillac and would like to share some of pictures. I do not post a recipes in that topic. So lets began.

German Style Salami - Smoked and Fermented

Post by Bob K » Wed Apr 15, 2015 22:20

Put this in the chamber back in January. Made using Poli's German -American Recipe with a few minor variations.
Smoke flavor , Ginger and Cardamom surely are the stars of the flavor profile.

I still have some in 3" casings that should be ready next month...excellent for sandwiches!

Nice job Bob! And so perfectly shaped and dried! I have a chamber full of stuff that is ready to pull down but have no time now to play with it.

Hello Sausage Lovers.
Spring so it is a busy time in garden and my small orchard, but during that time I have made some kielbasa and other smoked stuff. Very interesting flavor, texture, and visually nice - two kinds of kielbasa; Krakowska Suszona ( semidry) and Hunters Kielbasa (semi dry). Few pictures of them :first Krakowska

Hunter /Mysliwska

it is second smoking - after drying for 12 days (both of them)

during drying

ready to eat.
As today - both of them just memory - preparing for a new bunch
