Some Andouille I made a while back.
Here's what I put in it:
Boston butt, cure #1, morton kosher salt, black pepper, msg, onion pdr, garlic pdr, paprika, and cayenne.

Isn't it great to by-pass the supermarket stuff and enjoy your own recipe?

I checked out your terrific smoker photos in the hardware forum. Cool! How about posting your andouille recipe here? I'd like to make some as good lookin' as yours turned out, and I'm sure a few other folks would too. Keep up the good work fagesbp!
