Manchester Sausage

Does anyone have a recipe for Manchester sausage? Or some other sausage with ginger and nutmeg?

Hey, hey, "eyechart"!
I do! I do! I came across this strange recipe some time ago. My mother`s father was born in Manchester and his family discovered this recipe in an old sausage-making warehouse facility. The recipe below makes eighteen pounds of seasoning. I have no idea how much of the seasoning a person would have to add to ground pork to make a decent sausage.

Manchester Pork Sausage Seasoning (bulk)

9 lbs. table salt
6 lbs. ground white pepper
1/2 lb. ground mace,
1/2 lb. ground nutmeg
1/2 lb. rubbed sage leaves
1 oz. ground cloves
1 oz. ginger
1 oz. rubbed basil
1/2 oz. cayenne pepper.

(The only directions given were these):
*Thoroughly mix together, then keep in tightly covered tins.

That is enough for 200 kilograms of sausage. Somebody better get busy. :lol:
