chorizo puerto ricon hi am thinking of making some of these from the recipe how long will they keep before cooking on bbq thks

Is is recommended that fresh sausage can be stored refrigerated for 2-3 days. Use your discretion. You can always freeze if made ahead of time.

Like Bob said. What I do with my fresh sausages is refrigerate them for a few hours so that they set and the flavours integrate, then put them on a tray not touching each other until they freeze. Those that I will use within a month I pack into a ziplock bag and those that will be stored longer I vac pac.
