Venison Pepper crusted Jagerwurst

In a previous thread I had made some venison dried salami in a pepper lined cloth casing. My friend brings these in from Germany for his little Artisan sausage shop. I was helping in his shop yesterday as it's hunting season so he is extra busy. I brought in 12 pounds of venison from the deer I got last weekend and some of my 65mm cloth casings. He gets all his spices from Germany and has a few that are premixed spices only, you add your salt and cure after. He has a hunter salami blend like a Bierwurst. He has made some all pork and it's wonderful. It needs to be smoked and fully cooked in the smoker because of the cloth casings.

I made a 10 kg. batch that is going into the smoker this morning.
Venison was 12 pounds of class I and II
Pork was 4 pounds shoulder and 4 pounds belly trim.
I ground the pork shoulder 1 time through a 7mm plate.
The venison and belly trim were ground twice through a 5mm plate.
I used 6 grams/kg of the Hunter sausage spice.
17 grams/kg of pink salt.
1 kg. water.
Mixed for 10 minutes in the mixer and stuffed into 65mm pepper lined cloth casings.
Sat in the cooler overnight then going into the smoker this morning.

Never used the cloth casings but was wondering if they can be re-used. Seems like that would be possible. Can you do this?

No you can't. The pepper coating is some how pre stuck on to the inside 0f the cloth casing. When you peel the casing off you actually pull this string and tear it off. After they get hot, or dry the spice is released. Here is a link to the casings on the sausagemaker site. Sausage Maker won't ship to Canada, and shipping from the US to Canada is crazy expensive. As crazy as it seems it's way cheaper and usually faster to get them from Germany!

$19.99 USD!!! Holy Lard! That's more tha the cost of the 4lbs of meat that goes into one of those. Are they worth it?

Red, not at those US prices! You know what shipping costs from the States too. I got them for about $5.25 each Canadian, including shipping from Germany. And for some specialty salami they are worth it. I'll post pics once they're cooled and peeled tomorrow. The pepper coating really adds to it.

I recently came into possession of five sewing machines and after seeing the prices of these things I thought I might try my hand at making them myself. I've sewn a pillow case together once and that was easy enough so I might just try my hand at this. Maybe I could sell them for let's say $5.24 each - Canadian. :lol: :lol: :lol:

That looks good. Did you find the cloth casings allowed for more smokey flavor or not?

Yes, They are permeable and really took on the smoke.

Do the German bags also come with the pepper coating on the inside of the bag?

Yes they do. They are exactly like the ones in the link to the Sausage Maker. They also have a paprika lined one.

Geez what a markup! Thanks for posting that since many wonder how the heck those pepper coated salami are made. Now we know. :D

It's hard to see on the sausage maker site, but right at the bottom the $19.99 is for a package of 3, but that's still over $8.50 each Cdn before shipping and duty.
