I took a look at the recipe section of this forum, and didn't see anything for headcheese. I probably will just follow Rytek's. I notice it doesn't call for any garlic, and as a very big fan of garlic, I'm just going to have to add some anyway. Looking over the Rytek recipe I see three ingredients that I'm wondering if they will be a good combination with the garlic? Those are ground allspice, caraway, cloves and perhaps the ginger.
I think that allspice and cloves can be pretty dominate spices, as can garlic and wanted to get any input before I add the garlic.

No problema, Rick, we are here to help! I guess there are no "headcheese" recipes in the members index because other names were used, sulze, salceson souce, etc. They are all varieties of the same thing.
