Re: Smokehouse Modification

That's a pretty impressive build, congrats! I was thinking of putting my own smokehouse together as soon as I get myself some of this Costa Blanca property for the holidays, but I still have much to learn... Which is fortunate, as I'm not going to move until next October.

Re: Using frozen fresh pork for salami

Re: Smoked salt in ham making

I think it would be worth it to try and add some smoked paprika as well, it'll change from the "actual" salami recipe but will give it some extra personality.

Re: 1st Sucuk (soujuk) attempt

And would there be an alternative to Lutron pH testers if possible? If they're the kind of tool that can break easily, I'd like to check if there's a more rugged alternative before investing in a set of electrodes.

Re: Making Salami in Thailand

Now that's a success story, I didn't know you could get orders from hotels and restaurants by making salami in Thailand... It looks like I've chosen the wrong career  but on a more serious note, that's quite the impressive feat, congrats on "making it" through sausage making.

Okay, thanks, I was looking to do salami myself as well and ran into conflicting info regarding the proportions of everything, especially with the different sorts of peppers being used.

Re: Hi New Guys - Introduce Yourself

Thanks to all of you for the warm welcome! I've already started buying some basic equipment to do simple recipes by myself (a meat mincer, for example; I have a couple friends who hunt, and have a couple chickens at home, so I have fresh, natural meat on hand!) and have read a lot of great things in...
