I just finished building my curing chamber and I am looking to do my first project. I was thinking pepperettes or something that will cure fast? I'm hoping to having something ready in 3weeks for a get together with some friends. Any suggestions or ideas?
Hi Jason and welcome back. You are doing the right thing in doing an introductory run in your new chamber with something smaller. You can certainly try making something like salami sticks in sheep or collagen casings or even salametti in 30-36mm casings. Use cure#1 and the product should be ready in about 3 weeks. You can use what ever salami recipe you like. A coarse gring will also help with the meat drying faster. After a week lower the RH to 75 to speed up the drying.
